'The Intensity' 2006 (Olive Bruschetta with Red Onion Marmalade and APETINA Snack with Green Olives)

Serves 2 – 3
Materials
- 1 pack APETINA Snack with Green Olives
- 1 small baguette
- 1 90g jar of green olive tapenade, or other tapenade of your choice
- 1 large red onion, peeled, halved and finely sliced
- 2-3 tsp. sugar
- 2-3 tbsp. water
Method
Preheat oven to 180°C / 350°F / Gas Mark 5. Meanwhile, gently sauté the onion in a little of the oil marinade from the APETINA Snack with Green Olives pack until it's soft, transparent and just beginning to colour. Stir in the sugar and water and allow sugar to dissolve and the mixture to become slightly syrupy, remove from heat and keep to one side.
Cut the bread into 6 thick slices on the diagonal, brush each slice on both sides with the oil from the APETINA Snack with Green Olives pack, and rub the bread with the cloves of garlic cut in half. Lay the slices on a baking tray and place in oven for approx. 4 minutes each side to allow to just start to colour golden brown.
Spread the slices with the tapenade and top with the cheese and olives from the APETINA Snack with Green Olives pack, finally top each bruschetta with a little onion marmalade and serve warm.
