Chicken and APETINA Stir Fry

Materials

  • 2 chicken breasts - skinned and cut into strips
  • 1 jar APETINA cubes in oil
  • 1 bunch spring onions - trimmed and sliced diagonally into 2.3cm/1" lengths.
  • 1 orange pepper - de-seeded and cut into strips
  • 2 heads ( medium sized) Pak choi
  • 25g/1oz cashew nuts
  • 150g/6oz. Chinese noodles.

Method

  1. Heat 2-3 tbsp. oil from the jar of APETINA cubes in a large frying pan or wok, add the chicken and stir fry for 4-5 minutes until sealed on all sides, then add the onions, pepper and nuts and continue to stir fry for further 5-8 minutes until all ingredients are al dente.
  2. Meanwhile cook up noodles as directed on pack.
  3. Finally add approximately half of the APETINA cubes - drained, to the stir fry, and allow to heat through then serve on a bed of noodles.
