'Wild Sunset' 2006 (Orange, Ginger, Watercress and APETINA Cubes Salad)

Serves 2 – 4
Materials
- 1 x 200g pack APETINA Cubes
- 1.5cm 1" fresh root ginger, peeled and finely diced
- 1 medium onion, peeled and diced
- 1tbsp. olive oil
- 3 oranges
- 1 bag or bunch of watercress
Method
Sauté the onion and ginger in the oil until transparent and just tender, allow to cool. With a sharp knife, remove skin and pith from the oranges and carefully cut out the segments, reserving any juice in a small bowl. Remove watercress stalks from leaves.
In a suitable bowl arrange watercress leaves with orange segments and the drained APETINA Cubes. Mix the orange juice with the onion and ginger and spoon over the salad just before serving.
