'Earthly Invention' 2006 (Stuffed Mushrooms with APETINA Snack with Green Olives)

Serves 2-3
Materials
- 1 pack APETINA Snack with Green Olives
- 1 onion, peeled and diced
- 75g / 3oz. pancetta cubes or streaky bacon, diced
- 25g / 1oz. walnuts, chopped
- 3 tbsp. fresh breadcrumbs
- 1 tbsp. chopped parsley
- 6 medium to large field mushrooms, washed clean
- Black pepper
Method
Preheat grill to a high heat. Remove the stalks from the mushrooms and chop, chop the garlic cloves from the APETINA Snack with Green Olives pack.
Sauté these with the onion, and pancetta, in 1- 2 tbsp. of the marinade oil from the APETINA Snack with Green Olives pack. Meanwhile use the remainder of the oil to brush the insides and outer skin of the mushrooms.
Place the mushrooms under a medium to hot grill and gently cook until just tender. Combine the crumbs, pancetta and onion, walnuts and the APETINA Snack with Green Olives and pile into the grilled mushrooms.
Return to the grill and just allow the cheese to start to brown. Dice the olives from the APETINA Snack with Green Olives pack, and sprinkle on top to serve.
