Serves 2
Materials
- 1 pack APETINA Snack with Red Peppers
- 6 spring onions
- 4 baby courgettes
- 4-6 baby sweetcorn
- 2 heads pak choi
- 25g / 1oz. pinenuts
- 150g / 6oz. raw prawns
- Wild rice to serve
Method
Trim onions and cut into approx. 2.5cm/1” lengths, slice the courgettes into 3 -4 pieces on the diagonal. Halve the sweetcorns along their length. Roughly chop the pak choi.
In a large frying pan or wok, gently heat some of the marinade oil from the APETINA Snack with Red Peppers pack, and quickly sauté the vegetables and pinenuts, stirring all the while. Add the prawns after 3-4 minutes and cook until they turn pink.
Finally toss in the APETINA Snack with Red Peppers and stir through. Serve immediately with boiled wild rice.
