'Grain of Truth' 2006 (Cous Cous and APETINA Snack with Green Olives)

Serves 2 – 4
Materials
- 1 pack APETINA Snack with Green Olives
- 100g / 4 fl. oz cous cous
- 100ml / 4fl. oz water
- 1/2 a cucumber
- 1 medium red onion, halved and thinly sliced
- 225g / 8oz. mini plum or cherry tomatoes
- 2 tbsp. chopped parsley
- 2 tbsp. fresh mint
- Black pepper
Method
Make up the cous cous as directed on pack, allow to cool. Cut the cucumber into smallish cubes, removing the seeds. Cut the tomatoes into halves or quarters depending on size.
Combine cous cous with vegetables, chopped herbs and the oil marinade from the APETINA Snack with Green Olives. Then add the cheese and olives, and turn out into a serving bowl.
