Method

Preheat the oven to 200°C/400°F / Gas Mark 6. Cut the peppers in half, remove the seeds and cut each half into chunks. Lay on a large baking sheet.

Cut onions in half, remove skin and cut each half into four wedges, lay on tray with peppers and drizzle with the oil marinade from the APETINA Snack with Red Peppers pack. Roast in oven until vegetables just beginning to brown at the edges.

Pile roasted vegetables onto flatbread, scatter over the APETINA Snack with Red Peppers and return to oven for 6-8 minutes to warm bread base and cheese. Serve immediately.
