Braque's Butternut Bucatini

Materials

  • ½ cup of Apetina cheese
  • 2 cups of butternut squash, cubed
  • 2 tbsp of olive oil
  • 1 small onion, chopped
  • 1 tbsp of butter
  • 250g of Bucatini pasta (or spaghetti) boiled
  • 1 cups of fresh rocket leaves
  • ½ tbsp of honey
  • salt and pepper
  • 1 tbsp of fresh rosemary, chopped

Method

  1. Bake the onion and the butternut squash in the oven with the oil drizzled over them for 15 mins.
  2. Boil and strain the pasta.
  3. Add the rocket salad, butter, rosemary and honey
  4. Add the onion and the butternut squash to the pasta.
  5. Add the Apetina and salt and pepper to taste.
  6. Enjoy your cubist masterpiece!
