Salmon Fillets with an APETINA and Herb crust

A quick and tasty way to ring the changes with salmon - and very 'chefy' too!
Materials
- 2 salmon fillets
- 1 pack APETINA Light cheese
- Small bunch fresh parsley - chopped
- 25g/1oz pine nuts
- Little butter for greasing
Method
Preheat oven to 180°C (160° for fan assisted ovens) 400°F/Gas mark 6
- Crumble a generous one third of the APETINA cheese into a small bowl and mix well with the chopped parsley (you should have approx. 2tbsp. of chopped parsley) and pine nuts.
- Place the fish fillets on a baking tin or dish - lightly greased.
- Divide the APETINA mixture between the fillets and press onto the top surface to give an even coating. Bake for 18-20 minutes, serve hot with seasonal vegetables of your choice.
