Salmon Fillets with an APETINA and Herb crust

Serves 2

A quick and tasty way to ring the changes with salmon - and very 'chefy' too!

Materials

  • 2 salmon fillets
  • 1 pack APETINA Light cheese
  • Small bunch fresh parsley - chopped
  • 25g/1oz pine nuts
  • Little butter for greasing

Method

Preheat oven to 180°C (160° for fan assisted ovens) 400°F/Gas mark 6

  1. Crumble a generous one third of the APETINA cheese into a small bowl and mix well with the chopped parsley (you should have approx. 2tbsp. of chopped parsley) and pine nuts.
  2. Place the fish fillets on a baking tin or dish - lightly greased.
  3. Divide the APETINA mixture between the fillets and press onto the top surface to give an even coating. Bake for 18-20 minutes, serve hot with seasonal vegetables of your choice.
