'Rouge XI' 2006 (Stuffed Tomatoes with APETINA Cubes)

Serves 6 as starter, 3 for main course.
Materials
- 1 x 200g pack APETINA Cubes, drained
- 6 beefsteak tomatoes
- 1 onion finely diced
- 1 tbsp. olive oil
- A few sprigs of oregano, or other herbs of your choice
- Freshly ground black pepper
Method
Gently sauté the onion in the oil until transparent and allow to cool. Cut tops off the tomatoes and carefully scoop out the inner flesh. Discard seeds where possible and dice the rest.
Combine the diced tomato flesh with the onion, APETINA Cubes and herb leaves. Pile the mixture back into the tomato skins, grind over some black pepper and garnish with a few extra herb leaves.
