'Blush of Pink Flecked Innocently with Green' 2007 (Pasta with APETINA and Salmon)
Created by S. Bartolloni, Bristol
“…My perfect summer lunch - a dish I can throw together faster than I can peel my clothes off and dive into a swimming pool.”
Saskia Bartolloni
Serves 2
Materials
- 150g/6 oz Penne Pasta
- 2 salmon fillets - skinned and cut into cubes
- 1 jar APETINA cubes in oil
- Few sprigs of fresh dill (optional)
Method
Cook the pasta as directed on the pack. When the pasta is nearly done, heat 2-3 tbsp. of the oil from the APETINA jar in a frying pan and gently sauté the salmon cubes for approximately 8 minutes until cooked. Stir in a generous half of drained APETINA cubes and heat through. Drain the pasta and stir in the salmon and APETINA mixture, adding a little more oil to moisten the pasta if desired. Finally, stir in some chopped dill and serve.
