'In the Raw' 2006 (Salad with APETINA Snack with Green Olives)

Serves 2–4
Materials
- 1 pack APETINA Snack with Green Olives
- 1 cucumber
- 225g / 8oz. cherry or mini plum tomatoes
- 1 small red onion, finely sliced
- 2-3 tbsp. chopped flat leaf parsley
Method
Halve the cucumber, scoop out the seeds then chop each half into small chunks. Halve or quarter the tomatoes depending on their size.
Combine the prepared vegetables in a bowl. Add the APETINA Snack with Green Olives and sufficient oil marinade to dress the salad. Sprinkle with chopped parsley before serving.
