'Complete Compartment' 2006 (Pitta Pockets with Vegetables and APETINA Snack with Red Peppers)

Serves 3–4
Materials
- 1 pack APETINA Snack with Red Peppers
- 4 pitta breads
- 1 yellow and one green pepper
- 1 bulb of fennel
- Small bunch of spring onions
Method
Halve the peppers, remove seeds and cut into thin strips, cut fennel into thin strips, trim onions and cut into short lengths.
In a wok or frying pan heat some of the marinade oil from the APETINA Snack with Red Peppers pack and quickly stir fry the vegetables until just tender. Meanwhile heat the pitta breads on the barbecue, on a griddle or in the oven. Cut each in half and open up.
When the vegetables are ready, add the APETINA Snack with Red Peppers to the pan and toss through the vegetables, use the mixture to fill the pockets and serve warm.
